Banana cake with chocolate and walnuts

A perfect flavour combination of sweet bananas, bitter chocolate and crunchy walnuts.

Ingredients

75 g softened butter
75 g fruit puree
120 g Sukrin Gold
50 ml milk
2 eggs
180 g (300 ml) wheat flour
60 g (100 ml) FiberFin (can be replaced with flour)
1 tsp. baking powder
1 tsp. vanilla sugar
1 tsp. cinnamon
200 g very ripe bananas
50 g walnuts, coarsely chopped
50 g chopped Sukrin Dark chocolate

Instructions

Preheat the oven to 175 degrees Celsius. Line or grease a bread tin.

Beat the butter, Sukrin Gold, fruit puree and eggs together. Add in the flour, FiberFin, baking powder, vanilla sugar and cinnamon. Mash the bananas and add them into the batter. Mix in chopped walnuts and chocolate and bake the banana cake for approx. 45 minutes.

Sprinkle with Sukrin icing right before serving the banana cake.

Tip: Make a few banana cakes at a time - they're great for freezing and thaw quickly.
