Almond cake

A succulent and festive cake with a delicious taste of almonds - and the sky's the limit where toppings are concerned!

Ingredients

130 g of oil (neutral flavour) or melted butter
2 eggs
250 ml milk
200 g Fat-reduced almond flour
3 tsp. baking powder
120 g Sukrin icing

Topping:
Sugar-free jam or fresh berries and Sukrin
Vanilla cream (optional)

Instructions

Preheat the oven to 200 degrees Celsius. Line a round cake tin (24-26 cm) with baking paper.

Mix the milk and oil/butter in a bowl. (For a fruitier almond cake, you can replace half the fats with fruit puree, like unsweetened apple sauce). Whisk the eggs. Mix the almond flour with baking powder and Sukrin in a separate bowl. Add the liquid ingredients to the dry ones and mix well.

Transfer the dough to your cake tin and bake on the middle rack for approx. 30 minutes. Remove from the oven and cool.

Add the jam once the cake has cooled and decorate with fresh berries. Add a layer of vanilla cream between the cake and berries if desired.
