Cut the sun-dried tomatoes and feta cheese into cubes.
Add water, tomatoes, feta cheese, oil, oregano, Parmesan cheese, and finally the Fibre bread mix to a bowl. Stir to combine.
Place 6 large paper cupcake cases in a muffin tin. Divide the batter between the tins and bake for approximately 20-25 minutes at 200 Celsius/400 Fahrenheit.
Sprinkle with a little more Parmesan to serve.
