Pancakes with Cheddar cheese

With less than 2 grams of carbs per pancake these things are the perfect savoury treat.

Ingredients

4 small pancakes:
25 g Fat-reduced almond flour
1 tbsp. FiberFin (can be replaced with flour)
1 tbsp. oil
70 g cottage cheese
2 eggs
2 tbsp. low-fat milk

Butter/oil for frying
Cheddar cheese (or cheese of your choice)

Instructions

Mix all the ingredients, except for the cheese, together. Let the pancake batter rest for 10-15 minutes.

Add the butter/oil to your frying pan and fry the pancakes. Fry on one side, add the Cheddar cheese on one half of the pancake, fold the second half over the cheese and then continue frying until the cheese has melted.

Serve the Cheddar cheese pancakes with salad for a delicious and healthy pancake meal.
