Combine berries, Finesse Baking sweetener, and water in a saucepan. Bring to a boil, and let it simmer for about 15 minutes. During the final 10 minutes of cooking the berries, soak the gelatin sheets in cold water.
Strain the liquid from the boiled berries into a bowl. Squeeze out as much water as possible from the gelatin sheets before adding them, and stir until they are fully dissolved.
Pour into your desired mold, and refrigerate.
