Whisk the eggs until fluffy, then stir in Sukrin Gold. Add vanilla powder and baking powder and mix well. Sift in the coconut flour. Finally, whisk in the cream (or another liquid of your choice).
Because coconut flour absorbs a lot of liquid, the mixture will thicken quickly. If the mixture becomes too thick, add more liquid or an extra egg. Distribute the mixture into muffin cases, and optionally insert a small piece of chocolate into each muffin.
Bake the muffins for 18 minutes at 175 degrees in the middle of the oven.
