Delicious gluten-free carrot cupcakes with heavenly icing

Instructions

Melt the butter and grate the carrots. Whisk the eggs until fluffy. Combine all of the dry ingredients and fold them into the eggs. Mix in the butter and carrots.

Distribute the batter into cupcake/muffin forms and bake at 180 degrees for about 20 minutes.

Cream Cheese Frosting: Whisk the cream cheese and Finesse until fluffy. Whisk in the butter. (Both the cream cheese and the butter must be at room temperature!) Decorate as you wish.
