Spinach pie with FiberFin

A high-protein, fibre-enriched pie that tastes amazing - this is healthy eating at its best!

Ingredients

Pie pasty
150 ml (100 g) wheat flour
100 ml (50 g) FiberFin (can be replaced with flour)
50 g butter
100 ml cottage cheese

Pie filling:
250 g spinach
1 finely chopped onion
100 g feta cheese
½ tsp. salt
pepper
100 ml cottage cheese
100 ml milk
2 eggs
100-200 ml grated cheese

Instructions

Pie pastry:
Preheat the oven to 225 degrees Celsius. Grease and dust a pie tin.

Knead the wheat flour, FiberFin, butter and cottage cheese quickly together (a food processor is ideal for this purpose), then push the pie pastry into your pie tin. Cool the pastry in the fridge for 30 minutes, then bake for 10 minutes.

Filling:
Distribute the spinach, onions and feta cheese into the pie tin. If using frozen spinach, thaw and drain it first.

Whisk the salt, pepper, cottage cheese, eggs and milk together, then pour it over the rest of the filling. Sprinkle grated cheese over the pie.

Bake the pie on the middle rack for approx. 30 minutes. Serve with salad.
