Preheat the oven to 175 degrees Celsius. Line a baking sheet with baking paper.
Mix the dry ingredients using a food processor. Add in the eggs and butter. Run until the chocolate cookie dough is thoroughly mixed.
Use two spoons to place small dollops of cookie dough onto the baking sheet. Alternatively, roll the dough, then press the cookies down. Bake the low-carb chocolate cookies for approx. 10 minutes.
Cool on a baking grill until crunchy, then enjoy.
