Instructions
Cake:
Preheat the oven to 180 degrees Celsius. Grease a round cake tin (24 cm) using butter.
Melt the butter and allow it to cool slightly. Beat the eggs and Sukrin, then add in the milk. Mix the dry ingredients, sift, and fold them gently into the egg mixture. Stir in the melted butter.
Bake the cake for approx. 30 minutes. Remove from the oven and cool.
Frosting:
Bring the cream to the boil in a non-stick saucepan. Remove from the hotplate and add in the chocolate. Stir until the chocolate has melted.
Pour the frosting over the cake immediately. Be sure to use a chocolate you like for the frosting; we’ve used Nick’s Dark Chocolate.
Sprinkle the cake with pistachio nuts, slice and serve.
