FAQ
Where do the sugars in the mousse come from?
The total sugar content in the finished mousse is a combination of glucose from the whipping emulsifier, naturally occurring sugars in the other ingredients, and lactose in the milk that is added. 40% of the sugars come from the semi-skimmed milk. If you choose to use plant-based milk without sugars, you can reduce the sugar content by 40%.
How can you claim ‘no added sugar’ when the mousse contains glucose?
In the mousse, we use a whipping emulsifier that contains glucose. The glucose serves as a carrier for the other ingredients in the emulsifier and is not added to sweeten the product. This is why we can state that the mousse has ‘no added sugar’, even though it contains a small amount of glucose.
Why can’t you remove the glucose from the emulsifier?
The emulsifier we use is a pre-made product, and there is a very limited selection of emulsifiers that work in the specific way needed for the mousse. We wish there were an alternative without glucose and will continue to work towards finding one.
