How to make sugar-free jam successfully

Want to make your own jam without using sugar? Sukrin, a natural and calorie-free sweetener, is the perfect solution. Here are a few key tips to ensure the best possible result:

Sukrin will always try to return to its crystalline form, so it is best to avoid using more than 20% of the total ingredients in a recipe.

Jam is particularly prone to crystallisation, as it contains fewer binding agents to prevent crystals from forming. Additionally, jam is often left to sit for a while before being eaten, giving the crystals plenty of time to re-form. To avoid this, it’s advisable to keep the Sukrin content below 15% when making jam.

If you’re using tart berries or want a sweeter jam, we have a few suggestions:

  • Use Sukrin Plus, which is twice as sweet as sugar, so you only need half the amount to achieve the same level of sweetness.
  • Try Finesse Baking sweetener, which is also twice as sweet as sugar and carries less risk of crystallisation. (Please note: Finesse is not 100% calorie-free and natural like Sukrin sweeteners.)
  • Combine Sukrin Plus with Sukrin Syrup until you reach your desired sweetness.

Strawberry jam with Sukrin

1 kg hulled strawberries
110-160 g Sukrin Gold or SukrinMelis
30 g powdered pectin

Wash and hull the strawberries. Halve the larger berries. Remove any damaged berries. You can also use frozen berries.

Bring the berries quickly to the boil without Sukrin. Mix the powdered pectin with the strawberries. Simmer the mixture for approx. 2 minutes while stirring. Stir in the SukrinMelis and bring to the boil again, so that everything dissolves and cooks through.

Transfer the jam to clean, warm jars. Tighten the lid and place the jars upside down until cool. Keep the strawberry jam in the fridge.

Homemade blueberry jam

2 kg blueberries
400 g SukrinMelis
60 g powdered pectin

Stir the berries, SukrinMelis, and powdered pectin together in a large bowl to desired consistency. Transfer to suitable jars or containers and freeze the jam you won’t eat within 3-4 days.


Regular blueberry jam has five times more calories than this version, made with SukrinMelis. In addition, you get twice as many berries and an even better taste.
