Banana cake with pistachios

A deliciously juicy banana cake with hints of nuts and orange.

Preheat the oven to 175 degrees Celsius. Line a small, deep baking tray (approx. 20 x 30 cm) with baking paper.

Mix Sukrin Gold, oil, yogurt, and milk together. Add in the eggs and orange juice and stir. Sift the vanilla sugar, baking powder, flour and FiberFin into the mixture, then mix in the nuts. Add the mashed bananas last. The cake batter should be fairly runny in consistency.

Transfer the banana cake batter into the baking tray and bake on the middle rack for approx. 1 hour. The cake should be soft inside. Allow the cake to cool completely in the baking tray.

Remove the cake from the tray, sprinkle with SukrinMelis, and serve.
