Norwegian Christmas Bread

A delight of the Christmas season. Wonderful with butter and brown cheese.

Melt the butter and add the milk. Heat until the mixture is lukewarm to the touch. Dissolve the yeast and honey in the warm mixture.

Add raisins and candied peel (if using). Gradually knead in the flour, Sukrin Gold, and cardamom. The dough may be slightly sticky, which will make the bread moist.

Allow the dough to rise for about 30 minutes in a mixing bowl, covered with a cloth.

Transfer the dough to a well-greased baking tin of around 2-litre capacity. In a warm location, let the bread rise a second time for about two hours while being covered with plastic or a cloth.

Beat the egg and brush it over the bread. Bake the bread in the lower part of the oven at 175°C for around 40–50 minutes, or until fully baked through and golden brown on the outside. Allow to cool on a wire rack.

Note: This bread can also be made using a breadmaking machine.
