Whisk the eggs and Sukrin Gold together in a bowl, then add in the kefir/buttermilk and butter/oil. Add the dry ingredients and mix to a smooth, even batter.
Fry at medium temperature in a dry frying pan or on a griddle. Serve the Norwegian pancakes with berries and some low-fat sour cream or plain yogurt.
