Cover a small tin with baking paper. Mix cocoa, protein powder, almond flour, and SukrinMelis. Bring the syrup to a boil (in the microwave or a saucepan) and mix in the dry ingredients. Add some water if necessary. The mixture should be slightly firm so that you can push it into the tin.

Mix the ingredients for the caramel in a saucepan and boil at approx. 40% of full heat for 45 min-1 hour – stir regularly. The caramel needs to simmer in the saucepan throughout the boiling process. The mixture can also be boiled in a microwave at full power for 5 minutes and then for short intervals of approx. 1 minute until the mass has darkened in colour and thickened in consistency.

Pour the caramel over the first layer and set to cool until the caramel has hardened. Cut into desired pieces. Melt the chocolate (a water bath is preferential, so you can control the heat) and dip the pieces in the chocolate. Cool again until the chocolate has hardened.
