Fibre-rich, low-carb waffles made without wheat flour and with the perfect waffle consistency

Instructions

Mix all the ingredients together. If necessary, adjust the batter’s consistency with psyllium husk or water/milk. If you are adding extra psyllium husk, use caution and only add half a teaspoon at a time. Give it some time to “work” before reevaluating the consistency. Allow the batter to rest and swell for 15 minutes.

Cook the waffles in a waffle iron. You probably will not need to grease the iron.
