Wheat-free sandwich biscuits

These biscuits are crispy and tasty, and they make excellent snacks with or without toppings.

Preheat the oven to 200°C.

Melt the butter. Mix all the dry ingredients together in a separate bowl. Whisk the egg and mix it into the dry ingredients, along with the rest of the wet ingredients.

You should now have a sticky dough that clings slightly to your fingers. However, it should be fine to shape into small round biscuits, which you can place on a baking tray lined with baking paper.

Bake for about 10 minutes. Cool them on a wire rack. These biscuits taste great with Norwegian brown cheese, but they can be topped with anything you like.
