Instructions
Beat the eggs and Finesse together. Add the butter, cocoa, vanilla sugar, and salt, and whisk to an even mixture. Finally, mix in the flour.
Pour the batter into a baking pan lined with baking paper (30 x 40 cm). Bake on the middle rack at 200°C for approx. 10 minutes.
While the cake bakes, mix all the coconut cream ingredients together in a saucepan and leave to simmer while stirring for 5 minutes. Spread the cream over the half-baked cake, and bake for an additional 10 minutes.
Cool the cake before cutting into small squares. Place the squares in a container with baking paper between each layer. This cake is particularly well-suited for freezing.
