Delicious Norwegian Christmas cookies - out of the oven in just 30 minutes!
150 g butter
200 g wheat flour
50 g FiberFin (can be replaced with flour)
2 teaspoons baking powder
2 teaspoons vanilla sugar
90 g Sukrin Gold
Wash and sprinkles:
100 ml egg white
100 ml Sukrin or nib sugar
100 ml chopped almonds
Preheat the oven to 200 degrees Celsius.
Combine the butter with flour, FiberFin, baking powder and vanilla sugar (you can use a food processor here). Add the Sukrin Gold and lightly-beaten egg. Mix the dough quickly together.
Roll the dough into a long cylinder. Cut it into small pieces, shape these into small, round bites, and place them onto a baking sheet lined with baking paper.
Deflate the Serina cookies slightly with a fork, wash them with egg white, sprinkle with almonds and Sukrin, and bake for approx. 10 minutes. Cool on a wire rack.
Store the Serina cookies in an airtight container until serving.
