A low-carb, sugar-free, high-fibre and absolutely delicious Swiss roll - what's not to love?
Preheat the oven to 220 degrees Celsius. Line a full-size deep baking tray with baking paper and grease well using the oil or butter.
Beat the eggs and Sukrin in a bowl until airy. Mix wheat flour, baking powder and FiberFin together in a separate bowl. Fold the flour mixture carefully into the egg mixture.
Spread the Swiss roll batter evenly onto the baking paper and bake for 7 minutes. Once baked, this cake will be done in no-time, so you'll need to work quickly.
Remove the cake from the oven. Place a damp towel over the baking tray. Flip the tray, remove it, then carefully peel the paper off the Swiss roll base. Distribute the jam over the cake sheet, and immediately roll the Swiss roll together. Tighten the towel around the cake.
After about 5 minutes, the cake will have set. Store in an airtight container to avoid it from drying out.
Slice the Swiss roll, sprinkle with some SukrinMelis and enjoy.
