These delicious, easy muffins are the perfect base for your favourite flavour combinations. A great and healthy way to get creative for breakfast, snacks and lunch.
1 250 g packet of Fibre bread
300 ml water
85 g sun-dried tomatoes in oil
2 tbsp of oil from the tomatoes
2 tsp dried or fresh oregano
85 g feta cheese
50 g grated Parmesan cheese
Cut the sun-dried tomatoes and feta cheese into cubes.
Add water, tomatoes, feta cheese, oil, oregano, Parmesan cheese and finally the Fibre bread mix to a bowl. Stir to combine.
Place 6 large paper cupcake cases in a muffin tin. Divide the batter between the tins and bake for approximately 20-25 minutes at 200 Celsius/400 Fahrenheit.
Sprinkle with a little more Parmesan to serve.
